a dorian, I play the G major scale on the note a.
b Phrygian, I play the G major scale over the note b
and so forth …

Errr… yes, as long as you remember that A Dorian and G major have different tonal centers and also have completely different structures.
A Dorian = A B C D E F# G = T 2 b3 4 5 b6 b7
G Major = G A B C D E F# = T 2 3 4 5 6 7
These two scales happen to share the same notes because they are two modes of the same diatonic set.
